From 5 PM onward, something changes: the light softens and the piano begins to carry the evening. It isn't a performance — it's simply part of how we welcome people.
Part of the Room
At NOS, live music isn't entertainment brought in from outside. Our pianist is part of the team: alongside the kitchen and the service, he's one of the three ingredients that make the evening. The piano never demands to be heard — and yet it's the thing that stays with you.

From late afternoon
From late afternoon onward, the piano accompanies the shift from day into evening. It starts with a softer rhythm — perhaps over a drink — and slips almost unnoticed into the more intimate mood of dinner.
An occasion, a song
At dinner, when Martin is at the piano, the music is as much a part of the evening as the kitchen and the service. If you are booking for an anniversary, a birthday or an evening that matters, you can ask him for a song: just write it in the booking form on our website, at least the day before. Your request goes to Martin, who prepares it and plays it live for you during dinner. It is part of our craft and we do it with care: that is why we ask for a little notice.
