The people
A good evening isn't made of plates and light alone. It's made of who welcomes you, who holds the rhythm of the room, who sits at the piano. At NOS, in Alberobello, it's the people who make the difference.
The soul of the experience
When our guests tell the story of an evening at NOS, they rarely start with the food. They start with how they were welcomed, with the rhythm of the room, with that feeling of being in no hurry. The service is what they remember most — and for us that's not a detail, it's the craft.

What guests recognise in us

At the piano
every evening
NOS resident pianist
Martin plays live at NOS every evening. It isn't a performance brought in from outside: his piano is part of the room, exactly like the kitchen and the service. He plays softly, beneath the voices, and lets the conversations keep the time of the evening. A discreet presence — and yet often the thing guests carry home with them.
He sets the tone of our evenings. His piano is at home here.
The team
Behind every table there's a team working to make everything look effortless. It's the people in the dining room, in the kitchen and at the piano: together, they're what makes NOS a place you come back to.

Host
She welcomes you with a smile, and the evening is already off to a good start.

Head of Service
When he steps into the room, the evening finds its pace.

Server
She tops up your glass at just the right moment, without you asking.

Chef de partie
Calm in the kitchen, he sends the plates out without a sound.

Resident pianist
At the piano every evening, he sets the tone for the night.

Chief Everything Officer
You never quite know where to find him: one evening in the kitchen making sure all runs smoothly, one at the piano with Martin, one simply in the room with the guests.
La Dolce Vita
The best way to know who we are is to sit down. We'll be waiting — for an evening in no hurry.
See you soon
